What is Yangchun Noodle Soup?
Yangchun Noodle Soup (陽春麵) is one of Taiwan’s popular noodle and dumpling dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. Thin wheat noodles in a light, clear pork broth with green onion, fried shallots and a few slices of pork. Simple and comforting, it is one of the cheapest bowls you can order.
