鹽水意麵

Springy, slightly wavy noodles from Yanshui, a small town in Tainan, tossed with savory minced pork sauce, a little lard, bean sprouts and green onion. Usually eaten dry (not in soup) as a quick, cheap meal — the noodles soak up all the sauce.

Where to find it

Noodle stalls and small local eateries, especially in Tainan. Many shops offer a soup version too — ask for 乾 (dry) or 湯 (soup). A side of braised tofu or a soup is common.
