What is Rice Noodle Soup?

Rice Noodle Soup (米粉湯) is one of Taiwan’s popular noodle and dumpling dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. Soft, thick rice noodles in a savory pork bone broth with fried shallots and celery. Shops usually also sell boiled pork cuts (黑白切) to eat with it.
