What is Sesame Noodles?

Sesame Noodles (麻醬麵) is one of Taiwan’s popular noodle and dumpling dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. Wheat noodles tossed in a rich sesame paste sauce with soy sauce, vinegar, garlic and a little chili, topped with cucumber or green onion. Nutty and satisfying, served warm or cold.
