What is Barrel Chicken?
Barrel Chicken (桶仔雞) is one of Taiwan’s popular meat and seafood dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. A whole chicken roasted inside a metal barrel or clay jar until the skin is crisp and golden and the meat is juicy. Usually shared by a group and pulled apart by hand.
