What is Assorted Pork Cuts?

Assorted Pork Cuts (黑白切) is one of Taiwan’s popular meat and seafood dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. A plate of boiled pork cuts — such as pork belly, liver, heart, intestine and skin — sliced and served with soy paste, ginger and chili. The name means “cut this and that.” A classic side dish at noodle shops.
