What is Dry Yangchun Noodles?

Dry Yangchun Noodles (乾陽春麵) is one of Taiwan’s popular noodle and dumpling dishes, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. Plain wheat noodles tossed with soy sauce, lard or shallot oil and green onion, topped with a few slices of pork. Yangchun noodles are the simplest, cheapest noodles at a noodle shop — this is the version without soup.
