What is Oyster & Intestine Vermicelli?
Oyster & Intestine Vermicelli (大腸蚵仔麵線) is one of Taiwan’s popular noodle and dumpling dishes. Thin, soft wheat noodles in a thick, savory bonito broth, with small oysters and pieces of braised pork intestine, topped with garlic, cilantro and black vinegar. It is eaten with a spoon, often standing at the stall. Some shops sell only the intestine version (大腸麵線) or only the oyster version (蚵仔麵線).
