What is Dongshan Duck Head?

Dongshan Duck Head (東山鴨頭) is one of Taiwan’s popular snacks, found in Taipei, Taichung, Tainan, Kaohsiung and all over Taiwan. Duck heads, necks and wings, plus tofu and other items, braised in a dark soy and spice broth, then deep-fried and seasoned. Chewy and rich — you nibble the meat off the bones.
