Questions about Mala Tang
What is the difference between 麻辣燙 and 麻辣鍋?
麻辣燙 is one bowl for one person: you pick your ingredients, the staff cook them in the mala broth at the counter, and you eat straight away. 麻辣鍋 is a hot pot — a shared pot that stays bubbling on your table while you cook, usually at a sit-down restaurant and for several people.
How spicy is it, and can I change it?
The broth is both spicy and numbing from Sichuan peppercorn. Most shops let you choose: 小辣 is mildly spicy, 不辣 is not spicy, 大辣 is hot. Even 不辣 keeps the peppercorn fragrance, and the broth often contains pork or duck blood, so ask if that matters to you.
What is Mala Tang?
Pick your own skewers and ingredients, cooked in a numbing, spicy Sichuan-style broth and served in a bowl. Spice levels are usually adjustable.
